My husband and I have been doing the 500 calorie dinner challenge. Here’s what’s on the menu for week 4:
Monday – Baked veggie risotto (Weight Watchers), braised red cabbage, salad
Tuesday – Baked garlic chicken breasts (WW), leftover risotto, greenbeans
Wednesday – Indian chicken and vegetable stir fry (Eating Well), brown rice, sauted broccoli w/ sesame seeds
Thursday – Shepherd’s Pie w/ ground lamb (Prevention), black eyed peas, salad
Friday – Leftovers
Saturday – Leftovers or Out
Sunday – Chik ‘N Grits (Cooking Light), turnip greens, salad
