mmmm…..good tomato soup!!!

I can remember eating Campbell’s tomato soup and grilled cheese sandwiches since I was a little girl. Today I wanted to make my own tomato soup. I wanted FRESH tomato soup and wow, what a difference!! This is so good and like it says in the Campbell’s commercial, mmmm…. good!

Note: for this recipe I use a Vita-Mix blender. I am not sure a regular blender would work but this makes wonderful fresh tomato soup!!!  A regular blender would probably work if pureed in small batches.

1 1/4 pounds of fresh plum tomatoes
1 chicken bouillon cube
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 bay leaf
1/8 teaspoon dried basil
1/8 teaspoon white pepper
1 teaspoon lemon juice
1 tablespoon tomato paste
1/4 cup of butter
1/4 cup flour
2 cups milk
4 sundried tomatoes packed in water, drained

Put fresh tomatoes in a blender and puree until smooth. In a 4 quart pot combine all ingredients except butter, flour and milk. Bring to a boil and reduce heat to a simmer. Simmer uncovered for 30 minutes. Remove bay leaf. Place heated tomato mixture, butter, flour and milk in blender. Puree for 5-6 minutes. Add sundried tomatoes and puree for 5-10 seconds.
