April 2013 Monthly Menu


I know, I have been a bit remiss in posting this month’s menu.  Last week there wasn’t much to post as we ate Easter leftovers and lots of ham sandwiches.  Saturday (yesterday) I used up the last of the ham by making up a split pea soup.  It turned out really good.

7: Shrimp and Sugar Snap Pea Stir-Fry and Rice (yes, I know it says scallop, not shrimp but I couldn’t find any scallops at the store so I substituted it for shrimp.)

10: Leftovers (I cooked the Chicken Delicious but we didn’t eat it today. I am going to use the chicken in a casserole instead.) Chicken Delicious

3: Chicken Spaghetti and Salad (cook half and freeze half) I am buying a rotisserie chicken for this so I don’t have to cook any.
4: Chalupas (This is an old family fav. Buy the tostadas all ready made or fry up your own using corn tortillas. Spread tostadas with refried beans and top with grated cheddar cheese. Place in a 350 degree oven until cheese melts. Remove from oven and top with torn lettuce and chopped tomatoes. Sprinkle top with white vinegar. Yum! This is an old childhood fav that my mom cooked.)

February 2013 Monthly Menu


I haven’t been doing much cooking during January because both my husband and I are on diets.  We ended up eating mostly salads in January.  The first part of February the diet will basically continue except for Super Bowl Sunday where I think the whole family will splurge a bit.   I think we both overdid it during the holidays and we need to cut back on our calories.  Breakfast has consisted of oatmeal every morning or yogurt, lunch has been soup and dinner has usually been a salad.  This month I will be planning only a week at a time and will post updates here.

1:  Lemon Horseradish Fish Cakes, peas
2:  Butternut Bisque, Sandwiches
3:  Super Bowl Sunday!!  Pico de Gallo and Guacamole,  Buffalo Wings with Carrot and Celery Sticks along side Ranch Dressing (I don’t add the blue cheese in like PW does), here is another version of Buffalo Wings that is baked (I think I am making this version this year.  Much healthier and sense we are trying to cut back on calories, I think this will be much better.  PW’s recipes are not diet friendly.), Bacon Wrapped Jalapenos, Brownies  OR I think I will make these blonde brownies since it is February and I am in a Valentine mood.  🙂
This is going to be a crazy week at our house so a lot of food I have planned is either take out or dinners I already have in the freezer.
4:  Sushi Monday!!  I go to the local grocery store where they make fresh sushi daily.  We LOVE sushi and it is fairly low in calories!!
5: Sloppy Joes (Filling is already frozen in freezer. I just use Manwich that comes in a can.), Chips
6: Leftovers
7: Tacos (either homemade or Taco Bell)
8: Homemade Pizza or pizza delivered (since I won a free pizza at Papa John’s I guess it will be pizza delivered!)

I know, I know.  I have been MIA for a while.  Truth of the matter is…..I have had surgery.  I am getting back on my feet again.  My family has been fending for themselves lately.  Good thing I had some dishes frozen in the freezer!  I did manage to make a slow cooker pork stew.  Tomorrow I will post the next week’s menu.

17: Simple Perfect Enchiladas-This can be assembled before church and refrigerated. Bake in oven when returning home. Make the Garlic Cilantro Lime Rice while the enchiladas are cooking. Make the Marshmallow Crispy Treats the day before.

22:  Thanksgiving Menu and Recipes!!  OK, I pretty much use the same menu for Thanksgiving year after year.  However, I only cook these recipes once a year and my family always looks forward to it!  I am making Freezable Mashed Potatoes (this recipe is very similar to the original one that I posted), Pumpkin Pies, Pecan Pies, Sweet Potato Casserole and Dinner Rolls (This is not Pioneer Woman’s recipe!!  It is much easier!) ahead of time.  They are all freezable.

23:   Turkey Soup and leftover rolls-throw soup in crockpot so I can go shopping!!  Or make Turkey and Dumplings!!

24:  Pumpkin Enchiladas  (Use turkey meat instead  of chicken), Spanish Rice, Black Beans

25: Scandinavian Dilled Pot Roast, Mashed Potatoes, Green Beans, Dinner Rolls

October 2012 Monthly Menu

I have just about got my freezer all cleaned out.  Now there is more room for holiday baking!  Yipee!!  First order of business will be cooking a fresh pumpkin pie and freezing it for Thanksgiving!  I will post pictures and recipe!

1:  Tuna Noodle Casserole, Mixed Veggies (This recipe is really good!  I froze the leftovers in small containers that are perfect for taking to work for lunch.)

2:  Scalloped Potatoes and Bratwurst (place the Bratwurst on top of the potatoes and cook it at the same time) , Spinach Salad

3:  Slow Cooker Roast, Carrots, Potatoes, Gravy  (All of this can be assembled and put in a freezer bag and frozen.  Thaw in refrigerator overnight and put in slow cooker in the morning.)

4:  Roast Beef Sandwiches, Chips

5:  Chicken Cacciatore, spaghetti, salad, garlic bread  (Throw into a freezer bag the following:  4-6 chicken breasts, 15 oz. diced tomatoes, 8 oz. tomato sauce, 2 sliced onions, 2 minced garlic cloves, 1 teaspoon salt, 1/4 teaspoon pepper, 2 teaspoons oregano, 1/2 teaspoon basil, 1/2 teaspoon celery seed, 1 bay leaf, and 1/4 cup of white wine.  Squish the bag.  Refrigerate overnight and in the morning throw it all in the slow cooker and cook on Low for 8 hours.  Or put in freezer and cook for another time.)  As requested by my family, they wanted Fresh Strawberry Cake.  It is the best!

6:  Pepper Steak, Rice, Salad

7:  Hubby grills chicken and sausage, baked potatoes, corn on the cob

8:  Chinese Beef Broccoli, Rice (If you want to prepare some of this ahead of time the flank steak can be cut up and add the marinade to it in a freezer bag.  Freeze until needed.  Thaw in refrigerator.  As it thaws it will marinade.  I froze some broccoli that was on sale too.  The broccoli can be frozen separately.  These steps will take some of the work out of preparing this dish on a busy night.)

9:  Chili with Fritos and Cheese (it is starting to get cold here and chili is just the ticket for warming up)

10:  Tomato Soup and Grilled Cheese Sandwiches (an old family favorite)

11:  My son cooks his favorite spaghetti (and it is yummy!), salad, garlic bread (Or if you want to you can cook up a big crockpot full of marinara sauce and freeze the leftovers.  Here is a good recipe for marinara sauce.  I think I just might cook this up anyway to have some on hand.)

12:  Cook up a big crockpot full of 15 Bean Soup.  This is a very filling soup and wonderful on a cold day.  Serve it up with some Pepper Cheese Bread!

13:  Leftovers (If there are any, LOL!  We also eat any leftovers from the dinner before for lunch so there may not be any leftovers.  If that’s the case then sandwiches and chips will be on the menu for tonight!)

14:  Buttermilk Roasted Chicken, Mashed Potatoes and Gravy, Green Beans

15:  Breakfast for dinner!!

16:  Poppyseed Chicken, Rice, Salad

September 2012 Monthly Menu

I am running a little late getting my menu out this month.  I am so undecided in planning this menu.  Fall is in the air and I am beginning to think of cooler temperatures.  Fall reminds me of pumpkins, chili, and a whole list of foods that I only eat at that time.  Our weather here has been so unpredictable.  Usually September is still really hot but for some reason we have been experiencing cooler temperatures.  This makes me want to cook chili and cornbread or start putting pumpkins around the house.  I will be working on this menu as time goes by. so don’t give up on me.  We can always refer back to last year’s menu as a last resort.  Here is the September 2011 Monthly Menu.

Since I am typing more than just the menu in here, I am highlighting the meals in red to make it easier to find.  Links to recipes are in bold red.

1:  Crockpot Pizza Pasta, Garlic Bread, Salad (This recipe made a lot of food.  I froze all the leftovers.  We will have this again next month.)

2:  Pan fried Pork Chops, Macaroni and Cheese, Peas (I seasoned the pork chops with salt, pepper, sage and rosemary.  Then I added a little oil to the pan and cooked the pork chops.  They turned out really good.)

3:  Labor Day!  Grill some hamburgers and hot dogs.  Serve up some potato salad and watermelon.  Yum!  Take in a concert if there are any offered in your town.

4:  Fried Crappie, Green Beans, Potatoes

5:  Pan Roasted Chicken, Salad, Dinner Rolls

6: Chili Relleno Casserole, Beans, Corn  (In late August Hatch Chilies hit the grocery stores.  I bought some and roasted them up.  They are really good.  Peeling them is easy.  Here is a video showing 3 different ways to do it.)

7:  Go out to eat

8:  Chicken and Dumplings (Does everyone remember the Baked Chicken that I cooked last month?  In that recipe I cut up a whole chicken.  I didn’t use all the parts in the recipe.  The chicken that was not used in the Baked Chicken was frozen.  So today, I am going to use that chicken that I froze to make this Chicken and Dumplings.  Yummmm….comfort food to the max!!)

So after lots of thought for the rest of the month’s menu, I have decided that I need to clean out the freezer.  So this month’s menu will depend on what I find in my freezer.  As I slowly but surely clean out the freezer,  I will add dinners as I find them.  I think it is time to get the freezer cleaned out anyway because the holidays are going to be upon us soon enough and I will need room to keep some of the dishes I want to cook ahead of time.

9:  Shrimp Scampi and Salad (have the complete shrimp scampi dinner frozen in the freezer all the way down to the linguine!)

So…..I discovered that I have a ton of frozen whole tomatoes.  I have decided to make tomato sauce with all the tomatoes.  Run the frozen tomatoes under water and the skins will fall right off.  Then following these directions in this video. (I know she says to remove the skins after cooking but believe me, that is a pain!)   The tomato sauce can be made with Italian seasoning or Mexican seasoning to be used in all kinds of cooking.  I used an immersion blender to puree the tomato sauce.  I am going to freeze the sauce until I decide what to do with it.

10:  Pulled Pork SandwichesGourmet Potato Salad    Back in July I made a huge batch of Pulled Pork and ended up freezing the leftovers.  So today we will have the rest of the pulled pork.  It is really good!!

11:  Pork Steaks, green beans and potatoes  (We can only eat half of what I froze so I will have to have pork steaks again on another day.)

12: Meatloaf, Mashed Potatoes, Peas  

Wow, I am finding lots of unidentified bags of frozen food.  I sometimes get in a hurry and just throw stuff in the freezer.  I have got to stop doing that.  Now I may have to have a mystery dinner or two…….

13:  Mystery Dinner (unmarked frozen bag of food-I have no idea what it is), a frozen bag of veggies, salad

14:  Breakfast (found some frozen bacon and biscuits)

15:  Baked Spaghetti, Salad, Garlic Bread (This recipe made a lot.  We only ate half of what I fix and I froze the rest so tonight we will eat the rest of it.)

16:  Rotisserie Chicken, corn on the cob, mashed potatoes and gravy, green beans (Found a rotisserie chicken in the freezer that I had bought at the grocery store.  This will make the perfect Sunday dinner!)

I also found some dinner roll dough in the freezer.  It was some leftover dough that I had.  I didn’t have time to make them into rolls so I just threw it in the freezer.  So today I am going to make Cinnamon rolls with that leftover dough.  All I need to do is thaw it out, roll it in a rectangle, sprinkle with cinnamon and sugar and bake!  Oh yum…..

This FREEZER CHALLENGE is starting to be fun and yummy!

Since I am going to be working everyday this next week I am going to put together 5 slow cooker freezer meals.  I will get these meals put together and frozen the week before.  All meals for the next 5 days can be made ahead of time and frozen in a freezer bag.  All 5 meals are crockpot meals.

24:  Place in a freezer bag 2 pounds of spare ribs and pour in your favorite BarBQ sauce.  Freeze.  Put in refrigerator night before to thaw.  Put in crockpot for 6-7 hours on Low.  Serve with baked beans and corn.

25:  Chicken Broccoli Alfredo, fettucine, salad, dinner rolls 

26:  Hearty Beef Stew, Pepper Cheese Bread

29:  Chili Mac, Corn  (I just made this up as I went.  I used 1 pound of ground beef, 1 1/2 cups of elbow macaroni, poured 1 can of red enchilada sauce in a 4 cup measuring cup and added enough water to make 3 cups, salt and pepper, chili powder, garlic powder and some cumin.  Can sprinkle with cheese at the end.  Bring all of that to a boil and then simmer for about 15 minutes.  The whole family loved it.)

30:  Kitchen Sink Soup, Bread  (Kitchen Sink Soup is anything and everything you want to throw in there.  Leftover veggies, meat, add some water and some spices and you have soup.  It is different every time I make it.)

August 2012 Monthly Menu

What do you think of the new monthly format?  Easier to read or did you like it the other way?

1:  Eggs in Spicy Tomato Sauce with tortilla chips

2:  Saucy Fish Bake

3:  Pork Chops, Green Beans and Potatoes

4:  Manicotti, Garlic Bread, Salad

5:  Pigs in a Blanket, Beans, Corn (Use hot dogs and wrap them in purchased crescent roll dough.  Before rolling hot dogs in the dough, the hot dogs can be split and stuffed with cheese.  Oh man, I just noticed that I haven’t put my fav recipe for beans on here.  That is a MUST do because they are yummy!  Take advantage of the fresh corn on the cob that is out right now to round out the meal.  Oh AND serve the Pigs in a Blanket with lots of mustard!)

6:  Tacos

7:  Grilled Cheese Sandwich, Tomato Soup

8:  Go out to eat

9:  Meatloaf, Mashed potatoes, peas

10:  Easy Does It Spaghetti, Garlic Bread, Salad (Use leftover meatloaf meat to put in the spaghetti)

11:  Leftovers

12:  Frozen meal from freezer

13:  Breakfast for dinner!

14:  Quick Skillet Supper, Salad

15:  Baked Chicken, Scalloped Potatoes, Green Beans (Recipe coming soon on this one!  It is so good and luscious!  My mother-in-law gave me this recipe.  Just to entice you, part of the recipe is rolling the chicken pieces in sour cream!)

16:  Chili Mac and Cheese, Salad  (I haven’t made this recipe before but OMG it sounds good!  This will also make enough to freeze for dinner for another time!)

17:  Leftovers or go out to eat

18:  Pizza

19:  Chicken and Rice, Green Beans, Salad (I haven’t made Chicken and Rice this way before.  It has a different twist to it.  Will be posting this recipe soon too.)

20:  Crockpot BBQ Ribs, Beans, Potato Salad

21:  Chicken Enchiladas Au Gratin, Beans, Corn

22:  Mini Honey-Mustard Meatloaves with Roasted Potatoes, Salad (mmmm….a family favorite and easy too!)

23:  Beef with Snow Peas, Rice

24:  More-More, Salad (Good quick meal.  It is called this because almost everyone wants seconds!  Will be posting this soon!)

25:  Salmon, Rice Pilaf, Salad

26:  Tamales, Beans  (I buy fresh homemade tamales from the local Mexican bakery here.)

27:  Salisbury Steaks, Mashed Potatoes, Corn

28:  Oven Fried Chicken, Corn, Green Beans
